Asparagus & Lemon Soup

Asparagus & Lemon Soup

Serves 4

2 onions, finely chopped
450g asparagus, trimmed & sliced
300g potato, peeled & sliced
1 litre water
salt & pepper
1 tbsp chopped fresh oregano ( or 1 tsp dried)
juice of 1 lemon

Place onions, asparagus, potato & water in a large pan.  Bring to the boil and simmer for 10 mins until tender.

Add seasoning, oregano and lemon juice and simmer for 2 mins.


Blend and serve warm or chilled.
