Apple Crackers
Serves 4
4 medium, Granny Smith apples, peeled & chopped into
small chunks
1 tbsp caster sugar
½ tsp cinnamon
Low fat cooking spray
4 tsp low fat spread, melted
4 sheets filo pastry
½ tsp icing sugar
Place the apple chunks in a saucepan with the sugar, spice
of choice and 2 tablespoons of water.
Bring to the boil, then cover and cook gently for 5 minutes
until softened but still holding a good shape. Check for sweetness adding more
sugar if required. Set aside to cool thoroughly.
Preheat the oven to Gas Mark 5/190°C/375°F. Spray a baking
sheet with low-fat cooking spray, if using.
Melt the low-fat spread in a cup and add 1 tablespoon of
water. Take a sheet of filo, brush it lightly with the fat and water mixture,
then fold in half widthways. Spoon a quarter of the apple filling at the top
edge along the widest side and roll loosely up. Press the ends together lightly
like a cracker.
Place the cracker on the baking sheet and repeat the
process in step 4 with the other sheets and remainng filling. If you have any
fat and water mixture left, then brush this on top of the crackers. Bake for
about 20-25 minutes until golden brown and crisp. Remove to a wire rack to cool
and serve warm dusted with icing sugar.
