Palak Chicken ( Spinach Chicken )

Palak Chicken ( Spinach Chicken )

Serves 4

4 Chicken pieces (breasts/thighs)
500 g Spinach
4 Onions
2" fresh Ginger
Garlic 10 flakes
500 g Tomatoes (or 400 g tin chopped tomatoes)
1tbsp Garam masala
1 tbsp Ground cumin seeds
1 tsp Turmeric powder
Chili powder To taste
4 Green chilies,finely chopped (or to taste)
Spray oil
Salt To taste

Grind ginger, garlic and onion to a paste.

Heat pan and spray oil and fry the ground paste to a golden brown colour.

Add tomatoes and cook for a few minutes.

Add spinach and fry.

Add seasonings and chicken. Mix well, then add 1 glass water.

Cover tightly and cook over a low heat until the chicken is tender.
