Laziz Khumb

Laziz Khumb ( Laziz = Scrumptious Khumb = Mushrooms )

600 gms mushrooms, quartered
cooking oil spray
1 cup cabbage, shredded
3½ tsp garlic paste
4 whole red chillies, finely chopped (or to taste)
2½ tsp Coriander seeds
3½ cups tomatoes, chopped
4 green chillies, finely chopped (or to taste)
3 tbs ginger, chopped
½ cup fresh coriander, chopped
1 cup onions, sliced
1pepper, chopped any colour
salt
2 tsp garam masala

Heat pan and spray oil. and sauté over medium heat for 4-5 minutes. Drain.


Heat spray oil in a pan & sauté over med. Heat until the liquid has evaporated. Remove cabbage .


Pound red chillies and coriander seeds with a pestle.

Again reheat the spray oil in a pan, add garlic paste and stir over med. Heat for 20 secs. Add the pounded spices , stir for 30 secs. Add tomatoes and sauté for a few minutes. 
Add green chillies, ginger and half the coriander. Stir. 


Heat spray oil in a separate pan, add onions and sauté over medium heat until transparent . Add capsicum and sauté for 2 minutes. Transfer the masala from the 1st pan , add mushrooms and cabbage , stir constantly for 3-4 minutes. Adjust the seasoning . Sprinkle garam masala and the remaining coriander. Stir.
