Howard's Indian Rice Pudding

1 pint(s) semi skimmed milk
2 oz Pudding Rice (Short Grain)
1 tablespoon(s) single cream
2 oz apricots, moist packed, ready to eat, dried
2 oz sultanas dried
2 teaspoon(s) white sugar
1 medium egg
strands of saffron
1 cinnamon stick
grated nutmeg




Crush the saffron & add it with the cinnamon stick to the milk, bring to the boil. 
Add the rice and simmer uncovered for 30 mins.
Take off heat & remove cinnamon stick.
Beat the egg, chop the apricots & add all ingredients to the rice & milk (except nutmeg)
Stir. Transfer into oven proof dish.
Sprinkle the nutmeg on top & put in oven for 20-30 mins at 160 deg C
.
