Creamy Chicken Curry with Rice

"Creamy" Chicken Curry with Rice

Picked this recipe up from the WW website some years ago (when it was points, not pro-points or smart points) so please check the points before you use it to protect your weight loss.

From the kitchen of DROBSON

Serves 1


1 Chicken Breast

Mushrooms
Onion
2 or 3 chopped fresh toms (or tinned if you prefer)
Curry powder
Fresh Coriander, chopped
Paprika
Garlic
Oil or spray oil
2 and a half tablespoons of semi-skimmed milk
2/3 of a packet of Uncle Ben's microwave rice


Using a pastry brush (or a piece of kitchen paper will do just as well, very lightly oil the bottom of a frying pan and heat gently.
Cube the chicken breast and add to the frying pan.
Sprinkle a little curry powder over the chicken breast once sealed, and then turn over and spread the curry powder over the other side.
Add the onions, tomatoes and mushrooms.
Add your herbs and stir in the milk.
Turn up the heat a little to reduce the sauce.
Microwave your rice and its ready to eat.


Notes:

You can add more veg of your choice to this and of course cook your own rice if you prefer. Use Quark or fromage frais in place of the milk if you wish but do not boil this as it may separate.  This isn't harmful but doesn't look particularly good.
