75g sugar
0.5 tsp bicarb
2 tsp baking powder
100ml low fat yogurt (plain or flavoured)
100ml skimmed milk
1 med egg
1.5 tbsp sunflower oil
med eating apples
2 tbsp (70g) sultanas
ginger
cinnamon
nutmeg
ground cloves
Peel, core and dice the apples. Put in a pan with a little water, the sultanas, and spices to your liking. Simmer until the apples are soft and the sultanas plump. Allow to cool.
Sift the dry ingredients together. Add spices here too if you wish.
Mix the wet ingredients in a jug. Add to the dry ingredients and combine until smooth.
Drain as much liquid as possible from the apple mixture and stir into the cake mix. There will be a lot of apples! But this is good.
Spoon into muffin cases/tin and bake for 20 minutes or so at 180 C. Beware that the apples can sink and cause the muffins to stick a little on the bottom of the tin.
Notes
I admit this is a variation on the pineapple and raspberry muffins! But the oil is much easier than melting marg, and the apples and sultanas make a lovely moist squidgy muffin.
If you have slightly over/under 100ml yogurt (e.g. a small single tub), just make up to 200ml with milk. A little orange zest in the apple mixture can be good too.
