Sausage Casserole

Sausage Casserole 

Another WW community recipe from long ago.  Original points quoted so recalculate for your plan.

Frylight
4 Low fat sausages of your choice
Mushrooms, sliced
Onion, chopped
1 tin Campbells Low fat Tomato soup
1 tin chopped tomatoes

Heat the oven to Gas 6/200ºC
Spray a non-stick frying pan with frylight and brown the sausages gently.
Put the sausages into a casserole dish and add the mushrooms and onions
Mix the soup with the chopped tomatoes and pour into the casserole.  Cover  and cook in the oven for 1½ hours.

Serve with free vegetables of your choice.


Notes:
You could make this with chicken instead of sausages. You could use chicken or mushroom soup and stock instead of tomatoes to give it a different flavour.
Add sliced par cooked potatoes to the top and remove the lid for the last 30 minutes to brown them for a another change.


Sausage Casserole

1lb Tesco healthy eating sausages (or other 1-point bangers)
1 medium onion, chopped
1 large carrot, chopped
1 clove garlic, crushed
Spray lite
400g tin chopped tomatoes
1 large glass red wine
dried herbs eg. rosemary, thyme, sage or herbes de provence
1tsp cumin seeds
Worcestershire sauce

'Fry' onion, carrot, herbs and cumin in a saucepan until softened. Meanwhile cut each sausage into 3 ~1" pieces, and add to the pan.

Fry until sausages are sealed and look cooked.

Add tomatoes and then add a can-full of hot water.

Stir in wine and Worcestershire sauce, also a little Tabasco if liked. Simmer for 20-30 minutes until veg are tender and sauce is reduced and thick.



Nice served with pasta or rice (need to count the points for these), also with steamed green beans.

Sausage casserole

Take 2 of the M&S COU tomato and chilli sausages per person or veggie ones -2pts
1 tin of chopped tomatoes
2 onions
10 mushrooms
1 red pepper
hot pepper spice
1 tbs Worcestershire sauce
garlic
6-8oz veg stock (just t make it a bit more gravy like)
optional small tine of kidney beans or baked beans (I do this is using veggies sausages as it gives it more bulk since they are smaller than the COU) – 2pts

1.Arrange the sausages on a grill pan and grill for 10-15 minutes, turning frequently, until the sausages are cooked through.
2. Meanwhile, put the spray oil in a saucepan, add the onions, mushrooms and red pepper and cook until they are softened. Add the garlic and, then add the tinned tomatoes, stock and the drained beans if using. Season with red pepper and Worcestershire sauce (or preferred spice) and bring to a simmer. When the sausages are ready, dice them up and add to the sauce and simmer for 5 minutes. Serve with a green vegetable or salad

If I do it without beans then I usually have some mash potatoes with it as a splurge
