Minestrone Soup

1 medium onion, chopped
2 stalks celery, chopped
2 large carrots, peeled and diced
2 cloves garlic, crushed
1 x 220g tin chopped tomatoes
1 tbsp tomato puree
2 tbsp chopped fresh basil
2 1/2pts hot vegetable stock
1 courgette, diced
75 g green beans, chopped
75 g cabbage, finely shredded
50 g mini pasta shapes (2.5pts)
Heat the oil in a large pan, add the onion and cook for 3 mins. Add the celery, carrot, garlic and some seasoning, cover and cook gently for 15 mins. Add the chopped tomatoes and puree, basil and veg stock, bring to the boil, cover and simmer for 20 mins. Next add the courgette and green beans and cook for 10 mins, then stir in the cabbage and pasta and cook for a final 10 mins.
Notes
This is a seriously filling main meal type soup which can be served with a grating of fresh Parmesan (0.5pts for 5g).
If you use Frylight instead of oil it's only 0.5pt a serving. It might seem a bore to have all the different cooking stages, but it means that the flavour is vastly improved.
If you don't have mini pasta shapes then use some spaghetti, broken into short lengths.

Spray
a large pan with frylight, add the onions and cook for 2-3 mins. Add the
celery and carrots and cook for 2 mins. Stir in the passata, water, oxo
and herbs. Bring to the boil and simmer for 15 mins, then add the
courgettes and pasta. Cook for 8-10 min until the pasta is cooked.
Season
to taste and serve.
