Italian style courgettes

3 courgettes, washed and trimmed
2 teaspoons olive oil (1.5pts)
2 cloves garlic, crushed
pinch crushed dried chillies
1 x 230g tin chopped tomatoes
pinch caster sugar
1 heaped tablespoon shredded fresh basil
salt and freshly milled black pepper




Cut the courgettes in half lengthways, then cut into chunky half moon shapes. Heat the oil in a pan and saute the courgettes over a fairly high heat for about 5 minutes, stirring occasionally, until nicely browned. Add the remaining ingredients, cover and leave to simmer for 10 minutes. Serve warm.   





Notes
Good as a side dish, or mixed into pasta.
