Greek Spinach Pie



Greek Spinach Pie

500g Spinach, washed and stems removed.
Low fat oil spray.
2 onions finely chopped.
200g mushrooms finely sliced.
Small bunch of parsley finely chopped.
Small bunch of dill finely chopped.
1/4 tsp grated nutmeg.
1 med egg
100g low-fat soft cheese.
100g cottage cheese.
8 sheets of filo pastry.
Salt and pepper.



Pre-heat oven to gas 3/170ºC

Put the wet spinach in a pan and cook with lid on for about 4-5 mins until completely limp.
Put into a colander and press with a spoon to squeeze water out, then chop with a knife. Place in a bowl and leave to cool.

Spray a frying pan with oil and fry the onion and mushrooms for 5 mins till onion is transparent. Add to the spinach with the cheeses, herbs, seasoning, and egg. Beat together until well mixed.

Spray a 9" baking tin with spray oil then lay 4 sheets of filo pastry in the tin, spraying between each one with oil. Leave the overhanging bits left hanging over.

Place the spinach mixture into the tin then put one layer of filo over the top, fold the hanging over bits over this piece then place the rest of the filo pastry over the top in a scrunched up sort of way. Spraying between each layer with oil. Spray the top with oil and then cook for about 45 mins.  


Notes
This is lovely hot or cold with a crunchy mixed salad.
