Fruity Chicken

Another from the community recipes on the WW website from the days of original points.  Please check your points if using smart points to protect your weightloss

Servings | 1
estimated Points® per serving | 6

1 chicken breast, chopped
1/2 onion, chopped
1 pineapple ring, cut into chunks
1/2 veggie stock cube
1/2 pint boiling water
50 g rice
1/2 red pepper, sliced
1/2 tsp ginger
salt and pepper
dash lea & perrins


Brown the chicken pieces in a non-stick pan with the onions.
Add the rice, pineapple, stock cube, water and ginger, stir and simmer for 10 minutes or until rice is cooked.
Stir in pepper and add lea & perrins.
Heat for another 2-3 minutes then serve.

Notes

You can also make it with gammon if you have the points to spare.  Add spices of your choice if you like, curry powder is nice added with the rice.
