Creamy Beef & Mushrooms

spray oil
1 onion, chopped
1 crushed clove garlic
150g raw weight rump steak
mushrooms, sliced or quartered
courgette, chopped
peppers, chopped
70g extra light soft cheese
a little milk, stock or water



Cut the steak into thin strips.

Spray a pan with the oil and cook the steak to seal. add the onion and garlic and cook gently until softened.
Add the mushrooms and other veg and cook until the steak is cooked and the veg are tender but still have some bite to them.
Add the soft cheese and a little milk, water or stock to make a sauce.
Serve.  



Notes
Use chicken, pork or prawns instead of beef.
Serve with potatoes, rice or pasta, or even put into an ovenproof dish and top with mashed potato.
Add curry paste with the meat to make a curry. Its a very versatile mixture. Just adjust the points for whatever you use instead and don't forget to add the points for whatever you're serving it with.
