Cream of Cauliflower Soup

Cream of Cauliflower Soup

Serves 4

1 Cauliflower
100g Potato
2tsp Chicken Stock granules
1 pt water
1 tbls cornflour
1/2 pt skimmed milk


Break cauliflower into florets, wash and place in large pan. Add roughly chopped potato.
Add stock granules and water, bring to boil, cover and simmer for 20mins until cauliflower is tender.
Remove from heat and mash using a potato masher or for a smoother texture use a blender.
Blend the cornflour with a little of the milk.
Add milk then cornflour mix to the soup and bring to boil.
Adjust consistency with a little water if needed.
Season to taste.



Notes
To lower the points you can omit the potato. Broccoli can be substituted for the cauliflower which also makes a very warming soup.
