Butternut Squash, Carrot & Red Onion Soup

From the kitchen of SANDRAHMICHAEL

Serves 2


1/2 Butternut Squash
4 Carrots
1/2 Red Onion
2 Knorr Vegetable Stock Cubes
1.5 pints water
1 Bay leaf



Peel & chop the squash, carrots & onion into even sized chunks
Put into a pan with the stock & bay leaf & simmer for about 45 minutes.
Leave the soup to cool down & then blend it, heat it through & add salt & pepper to taste




You can add a pinch each of paprika & nutmeg if you’ve got some in the cupboard.
