Blackcurrant yogurt mousse

Another community recipe I picked up. Change up the fruit and jelly if you want a different dessert.

From the kitchen of TAMSINBH
Serves 3

1 sachet sugar free blackcurrant jelly
1 x 290g can blackcurrants in juice
200ml low fat natural yogurt


Sprinkle the blackcurrant jelly crystals over 275ml just boiled water and stir until dissolved. Let it cool slightly. Drain the juice from the blackcurrants and mix 100ml of the juice with the yogurt until blended. Add to the jelly and divide between 3 glass dishes. Cover and chill in the fridge until set. Serve topped with the blackcurrants.


If you've got points to spare, top with a bit of squirty cream, or a spoonful of Greek yogurt, sweetened if you like.
