lentils
300ml apple juice (1½pts)
2 tsp ginger puree
500ml water
2 onions, chopped
3 cloves garlic, crushed
2 carrots, diced
2 red peppers, diced
2 courgettes, diced
2 tomatoes, diced
2 tbsp soy sauce
2 tbsp white wine vinegar

Put the lentils
in a pan with the apple juice, ginger and water. Simmer, uncovered, for 20-30
minutes, or until lentils are tender and most of the liquid has gone.
In a separate pan, fry the onion, garlic and carrots for 10 minutes, until soft.
Add the pepper, courgette and tomatoes to the onion and carrots, and cook for a further 10 minutes.
Combine the vegetable mixture with the lentils, soy sauce and vinegar. Serve.
