Moroccan Spiced Veggie Burgers


Moroccan Spiced Veggie Burgers

Serves 4

No Count ½ pt per serving

Full Choice 1½ pts per serving

1 onion, finely chopped
frylight
pinch saffron
pinch turmeric
1 tsp mild chilli powder
1 red pepper, chopped
4 dried apricots, finely chopped
1 x 400g mixed pulses in brine, drained
50g fresh breadcrumbs
1 tbsp chopped fresh parsley or coriander
lime wedges to serve

Spray a non-stick pan and cook the onion for 5 mins, ot until soft.  Add saffron, turmeric, chilli powder and fry for 1 min.

Add pepper and apricots and cook for 5 mins, covered with a lid.

Transfer to a food processor with the pulses, breadcrumbs and parsley or coriander.  Season well and blend for a few seconds.

Turn out and shape into 8 patties, chil for 1 hour.

Cook on a BBQ or under the grill or in a non-stick pan for 15 mins, turning halfway.

Serve with lime wedges.

Nice with salad and pitta bread (2½pts each)
