Spaghettini with Orange Sauce and Smoked Salmon


Spaghettini with Orange Sauce and Smoked Salmon
Serves 2

5 pts per serving

For no count use frylight spray oil or count the points for the oil

Cook the Spaghettini following the cooking instructions on the packet, in the meantime, Fry the onion in the olive oil until pale and soft. Then add the tin of tomatoes and simmer for 5 mins. Juice the orange and grate the rind and add these to the simmering sauce, then add the teaspoon of sugar and the chopped Coriander, simmer for a further 5 mins. Add the roughly chopped smoked salmon and cook for 2 mins further until the salmon has turned light pink in colour. Drain the pasta and add to the sauce, mix it well to cover all of the pasta.

Add a teaspoon of parmesan cheese to the top when served, this will add a further ½ point
