Lentil, feta and tomato salad
Serves 4
6 green, 3 blue, 3 purple
2 x 400g tins green lentil, drained and rinsed
400g baby plum tomatoes, halved
25g fresh flat-leaf parsley, roughly chopped
160g light feta
60g WW garlic and chive dressing, or reduced fat French Dressing
Put the lentil, tomatoes and parsley in a bowl. Crumble over the feta and drizzle over the dressing.
