Pesto Risotto


Pesto Risotto

Half an onion, chopped finely
Frylite spray
1cm Garlic puree
Small glass white wine (1pt)
60g Arborio rice
300ml vegetable stock
1teaspoon green pesto (½pt)

Fry onions in frylite until soft, add garlic puree.
Add rice and fry until translucent and crackling.
Add wine and stir until rice has absorbed it.
Add stock little by little, stirring until it has been absorbed before adding more stock. This will take about 15 minutes.
Stir through pesto.

Adapted from a Jamie Oliver recipe. You could add parmesan instead of the pesto or use tomatoes and tomato juice instead of the stock
