Chilli-Marinated Peppers Over Noodles

Serves 4

Full Choice 3½ pts per serving

No Count  1½ pts for the whole recipe

1 of each large green, yellow, orange and red peppers, cubed
1 med red chilli, finely chopped
2 garlic cloves, crushed
2 tbsp soy sauce
2 level tbsp honey
1 tbsp dry sherry
juice of 1 medium lime
1 tbsp fresh rosemary, chopped
freshly ground black pepper
250g egg noodles

Place the peppers into a shallow dish which fits your steamer. Add the remaining ingredients, except the noodles.  Cover and leave to marinate for 1 hour, turning occasionally.

Transfer dish to steamer, cover with tight fitting lid and cook for 20 mins.

Cook the noodles in water or stock, as directed on the packet.

Serve the peppers on top of the noodles.
