Mexican Green Rice


Mexican Green Rice

Serves 4

Full Choice 5 pts per serving

340g dry weight long grain rice
1.2 litres veg stock
salt & pepper
1 tbsp ground coriander
1 large onion, finely chopped
2 large green peppers, sliced
2 fresh mild green chillies, finely chopped
2 medium courgettes, diced
225g frozen peas
4 tbsp freshly chopped coriander

Put rice in a pan with the stock, season and add the ground coriander.  bring to the boil, cover and simmer 10 mins.

Stir in all the veg except the peas, bring back to the boil, cover and simmer for 5 mins.  Add more liquid if it becomes too dry.

Stir in the peas and continue to cook, uncovered for a further 4-5 mins until the stock has been absorbed.

Adjust seasoning.  Stir in the fresh coriander and serve.
