Double Corn Cakes


Double Corn Cakes

Serves 4

Full Choice 6½pts per serving

No Count Recipe

1 x 500g pack of no-cook polenta
50g frozen sweetcorn, defrosted
frylight

Cook polenta according to instructions on pack.   Mix until smooth then stir in sweetcorn.

Shape into 8 patties and chill in the fridge for 10 mins.

Heat a non-stick pan sprayed with frylight and cook the patties 3 mins on each side until golden.


Could add chopped fresh chilli to these to give a bit of bite.
