Oriental Prawn Salad


Oriental Prawn Salad

Serves 2

Points per serving = 1 1/2 full choice

2 tbsps teriyaki sauce
1 tsp olive oil (1pt)
1 tbsp white wine vinegar
1 tbsp lemon juice
1 small garlic clove, crushed
1/2 tsp root ginger, peeled and finely chopped
120g prawns
180g mangetout
1 small red pepper, de-seeded and diced
lettuce leaves

1. In a med glass bowl mix together the teriyaki sauce, oil, vinegar, lemon juice, garlic and root ginger. Add the prawns, mangetout and red pepper and toss well to coat.
2. Cover and refrigerate for at least 30 mins.
3. Line 2 individual bowls with lettuce leaves and top with prawn salad.
