SALMON WITH MANGO SAUCE


SALMON WITH MANGO SAUCE

Serves 1

No Count = ½ pt per serving

1 salmon fillet
150 ml low fat natural yogurt
½ tbsp mango chutney (½ pt)
1 level tsp milk curry powder
½ small red chilli, seeded & finely chopped
½ tbsp fresh chopped coriander
salt & pepper

Preheat oven Gas 6/200ºC/400ºF

Place salmon in an ovenproof dish and season on both sides with salt & pepper.

Combine remaining ingredients and spread over the salmon.

Bake for 6-8 mins until just cooked.  (May take longer if salmon fillet is thick)
