Greek Prawns
with Feta

1 onion
finely chopped
1 green pepper diced
2 spring onions thinly sliced
3 cloves of garlic finely chopped
Can of chopped tomatoes
Half a glass white wine
Half tsp of oregano
1 tsp salt
half tsp black pepper
12 raw large king prawns(crevettes) peeled and de-veined
2 tablespoons flat leaf parsley
40g Feta cheese crumbled
Cook the onion and pepper in frylight for 5 mins. Add the spring onions and garlic and cook for a further 2 mins. Add the tomatoes, wine oregano salt and pepper and bring to the boil. Reduce the heat and cook uncovered for 10 mins.
Add the Prawns and parsley and cook for a further 3 minutes.
Sprinkle the top with feta and place under a hot grill to brown
Serve with rice.
