Thai style mince with Fragrant rice

An Ainsley Harriott recipe adapted and posted on the WW Community some time ago.  Once again i remind you to recalculate the points as these are for the Originial Points plan

From the kitchen of DORIS66
250g long grain or Thai fragrant rice
1 Tablespoon veg oil
1 onion, halved & sliced
1 garlic clove, chopped
1 red pepper,roughly chopped
450g turkey or pork mince
½ tsp chilli powder
175 ml chicken stock
2 Tsp cornflour
2 Tablespoons dark soy sauce
handful of fresh basil leaves, plus extra to garnish

Cook rice in pan of boiling water for about 15 mins
Meanwhile heat oil in pan and cook the onion for 3-4 mins, until golden. Stir in garlic and red pepper and cook for 3-4 mins, then add mince and chilli powder, cook for 2-3 mins until well browned. Stir in stock, bring to boil and simmer for 5 mins.
Blend cornflour with 1 Tablespoon of water and the soy sauce until smooth, add to the pan and stir until slightly thickened;season and stir in the basil leaves. Drain the rice and spoon onto plates, top with Thai mince and serve with a scattering of basil leaves
