Donuts

1 tsp baking powder
1 egg, beaten
1 tsp corn oil
75g caster sugar
4tbsp skimmed milk
1/2 tsp salt
low fat cooking spray
1/4 tsp ground cinnamon
2tbsp caster sugar for coating
1. Preheat the oven Gas 3/160C
2. Place all dry ingredients in a bowl.
3. Beat egg and milk together.
4. Add egg and milk and oil to dry ingredients and beat well to form a smooth batter.
5. Spray a mini-donut tin with low fat spray.
6. Using a tbsp, place 1 spoonful of batter into each donut ring. Do not overfill as they rise!
6. Cook for 10 -15 mins until light brown.
7. In a sandwich bag, place the sugar for coating and the cinnamon. Hold closed and shake to mix.
8. When the donuts are ready, ease carefully out of the tin and place in the bag, several at a time. Shake the bag to coat with the sugar.
9. If you can, leave to cool!
Notes
I've found it really hard to get hold of a donut tin, the only one I can find is available thru Lakeland
These freeze well.
