Herb-crusted Cod and Tomatoes

2 x 150g pieces skinless cod fillet
3 tomatoes, halved
juice and grated zest ½ lemon
25 g/1 oz fresh breadcrumbs
2 tsp butter, melted
10 g/ ½ oz grated Parmesan
2 tbsp chopped mixed fresh herbs e.g. parsley, chives, thyme



Preheat the grill.

Place the cod and tomatoes, face-up, on a baking tray greased with low-fat spray. Squeeze the lemon juice over the fish, then season the fish and the tomatoes. Mix the lemon zest, breadcrumbs, butter, Parmesan and herbs together, then press onto the fish and the tomatoes. Grill for 12-15 minutes (not too close to the grill or the crumbs will burn, until the fish is cooked through.  




Notes
This is really easy to make and so much more interesting than plain grilled fish, but still low in points. Nice with boiled new potatoes and green beans.
