Gingerbread

Gingerbread

Serves 16

Points per serving: 2 (original points)

1 spray low-fat cooking spray
150 g flour
1½ tsp baking powder
1½ tsp ground ginger
½ tsp bicarbonate of soda
½ tsp salt
4 tbsp butter, unsalted, melted
60 g light brown sugar
125 ml buttermilk
1 large eggs, lightly beaten
75 g treacle

Preheat the oven to Gas mark 4/180°C/350°F.Lightly spray a 23cm (9in) square cake tin with low-fat cooking spray.

Sift the flour into a mixing bowl along with the baking powder, ground ginger, bicarbonate of soda and salt. Stir in the melted butter, brown sugar, buttermilk, molasses, beaten egg and 50ml (2floz) water and mix until smooth.


Spoon into the prepared cake tin and cook for 45 to 50 minutes, until firm and springy to the touch. Allow to cool in the tin for 10 minutes then transfer to a cooling rack to cool a little more, serve whilst slightly warm.
