Umbrian Pasta Shells and Lentils

Serves 1

 

57g/2oz puy lentils

57g/2oz pasta shells

Fry light

1/2 onion, finely chopped

1 garlic clove, crushed

1 sprig of rosemary

3 ripe tomatoes, skinned and chopped

Salt n pepper

1-2 tbsps chopped parsley

 

1. Rinse the lentils in cold water. Cover with fresh cold water and bring to the boil. Boil for 5 mins. Simmer for 20 mins. Drain.

2. Bring a pan of salted water to ther boil and tip in the pasta. Cook, according to the packet instructions, until just tender. Drain.

3. Spray a pan with fry light and cook the onion, garlic and rosemary until tender. Add the tomatoes and seasoning. Cook until thick.

4. Stir in the lentils and pasta and cook for 2-3 mins. Remove the rosemary and serve sprinkled with parsley.
