1 onion,
chopped
2 cloves of
garlic, chopped
A handful of
chopped mushrooms
1 green or
red pepper sliced
1 courgette,
sliced
220g can of
red kidney beans, drained
400g can
chopped tomatoes
1 tsp chilli
powder
1 tsp of
dried basil or mixed herbs
Canned spray
oil
Spray a pan with spray oil. Heat the pan and cook the onion and garlic for a couple of mins then add the rest of the ingredients. Cover and cook on a low heat for 20-25 mins. Serve.
