Hijiki, Smoked Tofu & Sunflower seed Potato Topped Pie (Vegan)

Hijiki.
1lb/455g Frozen Smoked Tofu, defrosted & drained.
55g/2oz Sunflower Seeds.
1 1/2lb/680g mashed potato.
Small amount of fresh parsley, chopped.
1)Soak the
hijiki in cold water for about 20 minutes, then cook it in boiling water for a
few minutes until tender. Drain and allow to cool.
2)Mash the smoked tofu well in a bowl.
3)Chop the hijiki finely and add to the tofu together with the sunflower seeds.
Mix well and transfer to an ovenproof dish.
4)Spoon the mashed potato on top.
5)Bake in a pre-heated oven 375f/190c/Gas Mark 5 for about 20-30 minutes.
6)Decorate with the chopped parsley and serve hot.
Hijiki is a
form of sea vegetable which has a very strong flavour, which with the smoked
tofu gives the dish enough flavour without any extra ingredients.
The sunflower seeds give the dish a contrasting texture to the hijiki and tofu.
Other seeds could be used instead.
Serve with choice of vegetables.
