Tagliatelle with Chilli Pepper Sauce

Serves 4

 

300g tagliatelle

spray oil

225g courgettes, diagonally sliced

1 red chilli, deseeded & finely chopped or ½tsp dried crushed chillies

25g basil leaves

 

Put the pasta on to cook according to the instructions on the pack.

 

Meanwhile spray a large non-stick pan with spray oil and add the courgettes, frying for 3 mins or until they start to char.  Add the chilli and cook for 2 more mins.

 

Drain the pasta, return to the pan and add the courgette mixture.  Fold in the fresh basil and serve.
