Mushroom stir-fry with lemon noodles

115g of Sharwoods chinese fine egg noodles
1 veg stock cube
zest and juice of 1 lemon
1 med red onion, finely sliced
2 garlic cloves, crushed
450g assorted mushrooms
sliced
2 tsp fresh giner, peeled and finely chopped
1 tbsp light soy sauce
snipped fresh chives to garnish

1.Cook noodles in a pan of water with veg stock cube. Drain & toss with the lemon zest and juice.
2.Heat a non-stick wok or frying pan, add the onion and garlic and cook until soft. Add mushrooms, ginger and soy sauce. Stir fry quickly over a high heat until the mushrooms are just cooked.
3.Add the noodles and mix well together
4.Serve the stir-fry in warmed bowls and sprinke with snipped fresh chives
