Leek and bean casserole

No Count if you use krisprolls instead of breadcrumbs

 

1 leek, sliced
1 onion, chopped
1 or 2 garlic cloves, crushed
1 tin of mixed beans, drained

1 pepper, chopped
1 carrot, chooped
1 tin tomatoes
1/2pt stock
mixed herbs
2 slices of bread, crumbed (use krisprolls for no count)

 

Fry onions, garlic, leek, carrot and pepper for a few minutes.
Add remaining ingredients and bring to boil.
Pour into casserole dish and cover with breadcrumbs.
Bake for 15-20 minutes at 180C.

 

If you've got extra points, mix grated cheese with the breadcrumbs.
