Baked Aubergine

Baked Aubergine

Use spray oil to make this both no points and no count

 

1 aubergine
2 tsps olive oil
1 courgette
half an onion
2 cloves of garlic
1 can chopped tomatoes
lots of fresh basil
s&p

 

Slice aubergine in half and scoop about 2/3 of the middle out. Place aubergine shells in oven (180c) Heat the garlic and onion in the oil. Add courgette, chopped aubergine centre, tomatoes, s&p and basil. Simmer until the aubergines in the oven are browning, then pour mixture over them and bake for 20 min.

 

This is really filling - add pasta for a main meal. You can use mushrooms, shallots, fresh tomatoes and oregano if you like too, or even BeGoodtoYourself mozzarella (for some extra points)
