Lentil Curry

2 Large
onions chopped finely.
150g Chopped tinned tomatoes.
225g Butternut squash, peeled and chopped finely.
1 bunch frech coriander, chopped finely.
150g Tesco red split lentils (or yellow)
1 tsp turmeric
1 tsp chilli powder
1 tsp caster sugar
450ml water
4 tbsp vinegar
1 tsp cumin seeds, crushed (or same quantity ground)
salt and pepper
Put all ingredients
into a pan and simmer for about an hour or until the lentils are tender.
Mash the lentils with a wooden spoon and serve.
Nice with
jacket potato or with rice. You can add any meat you like to it also.

2 tsp olive
oil
1 onion chopped
1 carrott grated
100g red split lentils
tin chopped tomatoes
1/4 pint water
4 tsp asda veg gravy granules
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp curry powder
pinch chilli powder
Heat oil in
pan and add chopped onion and carrott, fry for about 2 minutes
Add spices and lentils and fry for another minute
Add water and once boiling add tinned tomatoes
Simmer gently for about 15 minutes.Add gravy granules to curry to thicken then
serve
A very tasty and
filling curry for 2, lovely with Basmati Rice (Add points for this)
If you prefer to use another thickener the points would be less as its 2 points
for the gravy granules!
