Spiced Mushroom & Pea Pilaff

Spiced Mushroom & Pea Pilaff


Serves 2

4½ pts per serving  full choice

No count.....use spray oil for completely no count recipe or count the points for the oil

 

1 medium onion, chopped
1 dsp olive oil (1.5pts)
lots of mushrooms, quartered (I use about 250g)
1/4 tsp turmeric
1 tsp hot curry powder
6 whole cloves
2 bay leaves
4 cardamom pods, crushed
1/2 tsp mustard seeds
1 tsp cumin seeds
120g basmati rice (6 pts)
150g frozen peas (1.5pts)
300ml boiling water

 

Fry the onion in the oil in a large pan until softened and browned. Add the mushrooms and cook for 2-3 mins until beginning to soften. Add all the spices and the rice and cook for 1 minute. Stir in the peas, boiling water and some salt. Bring to the boil, stir once, clamp on a tight fitting lid and turn the heat right down. Cook for 20 mins, without peeking. Remove the lid, turn off the heat and cover with a clean dry cloth to absorb the steam for 5 mins.

 

Delicious served with a drizzle of natural yogurt and poppadoms - if you buy the uncooked Sharwoods ones they can be zapped in the microwave for 50-60 secs (for 2), and are 1/2pt each. You don't need all the spices - just use whatever you have to hand
