Zero points Veggie Curry

Chopped onion
½lb baby mushrooms
½lb chopped carrots
1 clove of garlic
Can of chopped tomatoes
1 – 2 tbls Curry powder to taste
Season salt and pepper

Spray saucepan with spray oil, soften onion and garlic. Add mushroom and soften for 3 - 4 mins, Add chopped tomatoes, chopped carrots, curry powder, season to taste. Bring to the boil then simmer for approx 15 - 20 mins or to carrots are cooked.
