Baked Salmon with Tomato & Balsamic Dressing

Serves 4

Full Choice 4½ pts per serving

8 whole gherkins
2 large tomatoes, finely chopped
1 small red onion, finely chopped
4 tbsp balsamic vinegar
4 x 175g slamon fillets
salt & pepper

Heat oven to Gas 6/200ºC/400ºF

Mix gherkins, tomatoes and onion and season well.

Divide the mixture into 4 and place each portion onto the centre of a foil square.

Place a salmon fillet on top of each and sprinkle with the balsamic vinegar.

Wrap the foil loosely round the fish and bake for 8-10 mins until the fish is cooked.
