150g smoked
mackerel fillets
2 oranges
1 red pepper,
sliced
40g dry
weight pasta shapes, cooked
150ml natural
yogurt
2 level tbsp
peanut butter
Skin &
flake the mackerel and put into a bowl. grate the rind from the oranges
and reserve. Cut the oranges into segments and stir them into the fish
with the pepper and cooked pasta. Mix the yogurt, orange rind and peanut
butter together and toss the salad with it.
Serve.
