Spinach & "Cream" Cheese Soup

Serves 2
Put 350g spinach leaves, washed & chopped into
a pan, add 1 tbsp garlic, chopped and 575ml hot veg stock. Season and
simmer for 10 mins.
Add 2 tbsp extra light philly and 4 tbsp skimmed
milk. Puree and serve.
