Baked Halibut

spray oil
3 cloves
garlic, crushed
1 large
onion, finely sliced
1 x 400g can
chopped tomatoes
salt &
pepper
1 x 15g flat
leaf parsley, chopped
1 x 15g pack
fresh dill, chopped
2 x 175g
halibut fillets
Preheat oven
to 200ºC/400ºF/ Gas 6
Spray a
pan with spray oil and fry onion and garlic until softened & golden.
Add the tomatoes and reduce everything until it is a thickish paste. This
will take about 10 mins, but be careful it doesn't catch on the bottom of the
pan.
Add the herbs
and stir well.
Place the
fish into an ovenproof dish and top with the sauce. Place in the oven for
15-20 mins.
Serve with
rice (add points) and wedges of lemon. Can sprinkle with 1 tbsp flaked
almonds per portion, but this will cost 1pt (both plans)
