Butternut squash, carrot and cinnamon soup.


Butternut squash, carrot and cinnamon soup.

'Fry' a chopped onion in a bit of veg stock, add a chopped clove of garlic, one med red chili( or1/2 tsp chili powder). Cook till onion is soft.
Add 1/2 tsp cinnamon and 1/2 tsp ground cumin, stir for a min then add 1 butternut squash, chopped. 2 or 3 large carrots peeled and chopped, 1 tin chopped toms, veg stock, salt and pepper, simmer everything for 1/2 an hour and then puree. Add more stock if too thick...yummy with a bit of natural yogurt and a pinch of paprika!
