Avocado, Chickpea & Radicchio Salad

Serves 4

2 x 400g cans chicpeas, drained & rinsed
2 small heads radicchio, shredded
1 red onion, thinly sliced
handful of chopped fresh coriander, plus a few sprigs to garnish
2 large ripe avocados, cut into chunks

fat free dressing

Mix the chickpeas, radicchio and half the onion and the coriander.  Divide between 4 bowls.

Scatter over the avocado and drizzle with the dressing.  Top with remaining red onion and sprigs of coriander
