New Potato & Crispy Bacon Salad

700g baby new potatoes
2 tbsp lemon juice
2 tbsp tomato puree
2 tbsp white wine or cider vinegar
3 lean back bacon rashers
6 spring onions, finely chopped
75g sun-blush tomatoes, rinsed (3pts)
small bunch flat leaf parsley,roughly chopped
about 12 basil leaves
salt & pepper
Cook the potatoes, in lightly salted boiling water until tender, about
20 mins.
Meanwhile whisk together the lemon juice, tomato puree and vinegar in a
salad bowl. Add the drained cooked potatoes and leave them to cool.
Grill the bacon until crisp, then snip into the salad and add the spring
onions, tomatoes, parsley and basil. Season to taste, toss and serve.
