topped with Smoked Salmon & Green Pea Guacamole

250g frozen
peas
½ onion,
chopped
1 garlic
clove, chopped
½ fresh red
chilli, chopped
8 mint leaves
75g low fat
plain yogurt
½ tsp ground
cumin
6 Jumbo
Cheese Snack a Jacks
200g sliced
smoked salmon
Defrost the
peas & drain any water thoroughly.
Put the peas
in a food processor with the onion, garlic, chilli, mint and yogurt and puree
lighlty. Add the cumin and season to taste.
Place the pea
guacamole onto the top of the Snack-a-jacks and top with the smoked salmon.
Serve with
some salad leaves & a wedge of lemon
