Oriental Noodle Salad with Coriander and Lime

Serves 4

250g rice vermicelli noodles
1 medium carrot cut into fine strips
¼ cucumber cut into fine strips
4 spring oniosn, diagonally sliced
2 fresh red chillies, deseeded & finely sliced
2 tbsp fresh chopped coriander
2 tbsp torn fresh mint leaves

Dressing
4 tbsp lime juice
4 tbsp fish sauce
2 tsp granulated sweetener

Cook noodles as directed on pack.  Drain, rinse with cold water until cold then drain again.  Put in large bowl with veg and herbs.

Mix dressing ingredients and pour over the noodles etc and mix gently until well combined.

Serve chilled or at room temp.
